Bellingham’s Smoking Crow brings a wellness-based focus to Whatcom County cannabis. On January 20, they celebrated their Grand Opening with a day of education, live music and a ribbon cutting with the Bellingham/Whatcom Chamber of Commerce. Curious customers, local musicians, organic cannabis growers, college students, senior citizens and everyone in between gathered at the quaint, pristine shop on Pacific Highway—located one minute from the Costco on Bakerview Rd.

Managed by Kayla Hall, Smoking Crow’s mission is to be a premiere destination with an atmosphere that gives users a more meaningful experience, allowing them to learn something new about the plant they love. Kayla’s team is medically endorsed and, as a purchaser, she makes a point to work with growers and processors who believe in the plant’s medicinal properties.

This is not to say they only serve patients. People who simply enjoy cannabis can shop at Smoking Crow for the most potent, high-grade, sustainably grown flower, purest edibles and concentrates on the market. For a lot of people, it’s not about medical or recreational. It’s something in between or a combination of both. Having a place to learn and explore cannabis’ potential is a huge part of what Smoking Crow is all about.

The mood at the Grand Opening was light and uplifting. The focus was on education—about the Smoking Crow brand as well as the many uses and benefits of cannabis itself. People mingled and talked to budtenders and growers while local musicians, Matt & Olivia, filled the air with acoustic originals. A customer walked in and said, “This is the way a weed store should be.”

Countertops were dotted with terpene diffusers and information about aspects of cannabis. Here users could learn about topics like terpenes, cannabis’ beneficial molecules which give it its various effects, flavors and scents, such as lemon, pine and in some strains, even skunk!

A quick look inside the glass cases revealed brands known for their organic growing methods: Lazy Bee Gardens from Methow Valley, Sugarleaf from Skagit Valley and Cascadia Gardens from right here in Bellingham. Kayla pointed out some of her favorite growers. “I’m really excited about Daddy Fat Sacks, Sweetwater Farms and Raven Grass—all focused on terpenes and cannabinoid content,” she said.

Nichole Graf and Micah Sherman of Raven Grass explain their organic growing method and proprietary CBD strains to WhatcomTalk’s Kevin Coleman. Photo credit: Will Kersten.

Raven Grass, who is developing their own pesticide-free, proprietary CBD strains, had an educational table set up just inside the front door. “We build our own organic soil and stay away from bottled nutrients as much as possible,” said Co-Owner Nichole Graf. She and business partner, Micah Sherman, shared what Raven Grass does and how people can achieve the best effects while enjoying themselves at the same time. “Cannabis is supposed to be a positive experience!” Nichole said with a smile.

Budtenders were also busy talking with guests. A brand new budtender, Scott Dransfield, moved to the area from Virginia, hoping to find a way into the industry. He came to the role with virtually zero related experience so getting up to speed on the science and medicinal aspects of cannabis was his first priority. “Before this, I just smoked what I could find,” he said, “so my training focused a lot on terpenes and the business side. But there’s still a lot that I’m learning. One thing that’s surprised me about this industry is the comradery. I’ve never worked in a field where everybody is friends!”

For Connie Kellar, a long-time medical cannabis expert and advocate, budtending at Smoking Crow is a “dream job,” allowing her to help others benefit from her extensive knowledge. Photo credit: Will Kersten.

Another budtender, Connie Kellar, has been deeply involved in cannabis for most of her adult life. For the past sixteen years, she’s grown medical marijuana and developed her own tinctures, lotions and salves. “I’m living the dream,” she said. “I’m part of the generation that brought legal cannabis to fruition. And Smoking Crow—this is the next level.”

Connie was in a car accident as a child, which left her with lifelong chronic headaches. She said it would have been easy for her to become addicted to opiates, but she instead sought relief through cannabis—particularly CBD-dominant strains that work well with her type of pain. After experiencing personal success in healing her symptoms, she now wants to help others experience the same. “My passion is really to help people with pain and introduce them to CBD,” she said.

Smoking Crow is owned by retail entrepreneur Matt Mills. While a long-time fan of cannabis, he lacked specialized industry experience. He overcame this by relying heavily on Kayla’s extensive knowledge and positive vision. Kayla has been a force in the local cannabis scene as a budtender and store manager since Washington’s legalization. “It’s really all on her,” said Matt. “If there’s one thing that’s made this all possible, it’s Kayla’s drive and passion for this amazing plant.”

What makes Kayla’s—and Smoking Crow’s—vision so special is their mission to take cannabis to the next level in terms of education and raising awareness. “I want to shift the dialogue away from THC content and focus on terpenes, cannabinoid profiles and growing processes,” Kayla said. “High THC numbers don’t really tell you anything about a strain. Why do you like this Bubba Kush? Because it’s high in caryophyllene [a terpene also found in black pepper, cloves and hops] and helps you relax. We want to get this information out there and partner with growers that share in this vision.”

PeaceHealth Offers Hope with Heart Failure Treatment Options

PeaceHealth St. Joseph Medical Center honored

Placing the word “heart” before the word “failure” makes it sound like the end. Fortunately, this isn’t the case. While it sounds frightening, heart failure simply means that your heart isn’t pumping as well as it should. Hope is not lost. There are options.

Dr. Rex Liu is a heart failure cardiologist and member of the PeaceHealth Medical Group Cardiology team in Bellingham. Photo credit: Mark Turner.

Several things can affect how well your heart pumps blood, such as high blood pressure, a heart attack or coronary artery disease. Other conditions such as diabetes, heart rhythm, your overall health and your individual life choices can also contribute to heart muscle function.

When your heart isn’t pumping well, your body tries to make up for it by holding on to salt and water. This increases the amount of blood in your blood stream. Your heart might beat faster or may even become bigger. These heart changes manifest through symptoms like tiring easily, feeling dizzy, being short of breath or feeling like your heart is pounding and racing.

“Heart failure is, first and foremost, a progressive disease,” says Dr. Rex Liu, a heart failure cardiologist and member of the PeaceHealth Medical Group Cardiology team in Bellingham. “There is a greater than 20 percent risk for developing heart failure once past the age of 40.”

Since heart failure is progressive, the symptoms increase over time. As heart failure gets worse, fluid starts to build up in the lungs and other parts of the body. This can cause breathlessness while being still, swelling, weight gain and coughing or wheezing, even when laying down.

Fruits and vegetables are part of a heart healthy diet. Photo courtesy: PeaceHealth.

“Heart failure means that your heart is not doing what it’s supposed to do,” says Dr. Liu. “It’s not circulating the blood in an effective fashion. Whether [your heart] is too stiff or too weak, it’s irrelevant – it’s just not doing what it needs to do.”

Dr. Liu has been in the medical profession since 1998. He explains that people need to be aware of maintaining general health. The healthier a person can stay, the better chances a person has if they do develop heart failure.

Taking care of yourself and being mindful of your lifestyle help in both the treatment and prevention of heart failure. Eat less salt because salt makes your body hold on to water, worsening symptoms. Watch your weight and maintain a regular exercise schedule, but remember to talk to your doctor about what level of exercise is safe for you. Stop smoking. Limiting alcohol consumption will also help your body and decrease the chances of heart failure.

Additionally, there are medications that can change and even reverse heart failure for some people. But it is important to remember that heart failure is progressive and, as Dr. Liu says, “There is, unfortunately, no cure for that.” Knowing your health could worsen can lead to feeling hopeless or sad, which is normal. But if the feeling lasts, talk to a doctor.

Exercise strengthens the heart muscle. Photo courtesy: PeaceHealth.

“We have exceptional physicians and they bring with them exceptional therapies that we can provide to our community,” says Jerry Marschke, executive director of Cardiovascular Services at PeaceHealth St. Joseph Cardiovascular Center. “Otherwise all our patients would be headed south [to Seattle] which is hard on patients that are older or have heart failure.”

Fortunately, PeaceHealth’s St. Joseph Cardiovascular Center has an award-winning, nationally recognized program with a comprehensive range of heart care services. “We actually have a dedicated heart failure program,” says Marschke. “We can treat the common heart failure and the most advanced.”

The Cardiovascular Center has attracted highly specialized cardiologists, heart surgeons and vascular surgeons to Bellingham. These specialists collaborate with the center’s expert staff to deliver needed care and are considered to be among the leading heart and vascular specialists in the nation.

“I take great pride and joy that, hopefully, by applying the appropriate medications, treatments and maybe even surgeries, we are able to return quality of life for these patients to where they are now truly enjoying life,” says Dr. Liu.

Heart failure can easily be one of the scariest things a person may face but with the right team, treatment plan and goals, returning to and maintaining a heart-healthy lifestyle can reduce symptoms of heart failure and slow the progress of the disease.

Ghost Judy Can’t Wait for Peter Yarrow to Perform At MBT

Mount Baker Theatre's Mainstage has over 1,517 seats. Photo courtesy: Mount Baker Theatre.

Ihave been floating through the ornate halls of Mount Baker Theatre (MBT) since it opened in 1927. Everyone calls me Judy. I wouldn’t really say that I “haunt” the theater. I’m a friendly spirit. I putter through the dressing rooms after hours, hang out in the balcony and sit on the chandelier.

Peter Yarrow performs in concert at MBT on June 29. Photo courtesy: Mount Baker Theatre.

Of all the 400 shows that come and go on the stage of MBT some of my favorites are the ones that explore history. The importance of remembering the past and celebrating its hardships, sharing its successes and singing along to the music is what really makes me feel connected to the people that come into the theater.

That’s why I’m thrilled to reminisce with Peter Yarrow in Concert. I can’t wait to spy on Peter Yarrow of Peter, Paul and Mary. You know, Puff, the magic dragon lived by the sea, and frolicked in the autumn mist? Yes – that Peter!

That’s right, the Peter Yarrow. He’s coming to our Mount Baker Theatre. I remember learning about his story in a discarded New York Times article that talked about how Peter, Paul and Mary mixed music with politics and social activism. They even marched with Rev. Dr. Martin Luther King Jr. in Selma, Alabama, and Washington, D.C. I also learned that the trio sang at the 1969 March on Washington, which Peter helped to organize.

Peter really is a legend for his work and his music. I hope he sings Puff the Magic Dragon and If I had a Hammer! Music has a way of reconnecting places, people and the past in the most magical way. I can’t wait to sing alongside Peter.

The event will open with a welcome address by the Governor’s Policy Advisor on Outdoor Recreation and Economic Development, Jon Snyder. Recreation Northwest actively collaborates with Washington’s outdoor recreation industry professionals to create a strong, state-wide community. Their goal is to highlight outdoor recreation and its vital importance to our area, health and economy.

What began as a simple place for racing organizations and directors to gather, EXPO has evolved greatly over time and is now a major event.

“We’re so proud to be able to present the Recreation Northwest EXPO as a free event to the community,” says Elsworth. “It’s a place of discovery. Come and talk to the people who do this work – they’re excited about the people who attend. Be active and engaged and you will find something new.”

Old World Deli: Sandwich Artistry At Its Finest

Old World Deli offers weekly sandwich specials and serves a variety of of specialty meats and cheeses. Photo credit: Conor O'keefe.

What constitutes a perfect sandwich? Ah, a question for the ages. What is the exact combination of sweet, savory, salty and crunchy that meld together perfectly to create a true work of sandwich art? Well, I think we finally have our answer. After thorough research, examination and a healthy amount of taste-testing, I can say Old World Deli has figured it out.

The mouth-watering Bruciolone special will contain the jam-packed rolled flank steak served on an Italian roll with Ferndale Farmstead provolone and plenty of arugula. Photo credit: Anna Adams.

At Old World Deli, they don’t rush the creative process. General Manager, Zach Holmes, and Owner, Christos Adams, collaborate on sandwich ideas. The ingenious results of their creative process are served up in weekly specials.

Zach, Christos and the rest of the crew are committed to creating a unique flavor experience. Nothing is overlooked when they’re concocting a sandwich. From ensuring that the proper bread is paired with the best, one-of-a-kind, hand-crafted meat to balancing out the right ingredient textures, Zach and Christos navigate the process like skilled surgeons (opting for porchetta over scalpels).

“There’s a lot of preparation, planning and love that goes into our sandwich specials,” says Zach. “A big reason why we take so much time with each sandwich we prepare is because a lot of the meats we use are made in house, and that takes time.”

Before they’re used, Old World Deli meats must be rubbed, brined, aged, smoked or cured depending on the type of meat they’re creating. Truly remarkable tastes take time. Zach and Christos are always excited to work on creating new meats for upcoming sandwich specials. So, you may ask, what are they working on now? An interesting cut of stuffed beef with Sicilian origins called “bruciolone.”

Try one of Old World Deli’s Chicken Cuban sandwiches, containing House Smoked chicken thighs, caramelized onions, banana peppers, cilantro and aioli. Photo credit: Anna Adams.

Christos lets me look at the beef while it’s cooking. It’s unlike anything I’ve ever seen. To make bruciolone, you pound out flank steak and stuff it full of onion, bread crumbs, parsley, garlic, parmesan and Romano cheeses, mortadella and chopped egg. Once everything is stuffed, you roll up the mixture and tie it together. After it’s securely tied, the stuffed meat is braised in a tomato sauce.

Zach says they’re already getting some ideas on what to pair the meat with. Initial thoughts include provolone cheese, arugula and their house ricotta cheese. However, Zach and Christos assure me the recipe won’t be finalized until it’s properly taste-tested.

“We always make sure to create taste-testers,” Zach says. “Sometimes the idea for a sandwich can change completely after the testers go around to a few people.”

Zach even gave a new sandwich taste-tester to one of their wine delivery drivers for an outside perspective. “We want to know what other people think about what we’re putting on the menu,” Zach says. “This way we can put things on the menu we know will sell well.”

Old World Deli’s house-made porchetta is simply mouth watering. Photo courtesy: Old World Deli.

Old World Deli’s collaborative and creative nature is reflected in the many diverse vendors from which they source their ingredients. They gather products from around the world and right here at home. For example, all of their bread comes from Breadfarm in Bow, Washington.

According to Zach, using the right type of bread matters as much as the ingredients between the slices. By sourcing from a local bread purveyor such as Breadfarm, Old World Deli can ensure they’re getting high-quality ingredients while fostering local relationships.

“No one sandwich is the same,” says Christos. “If you want to have unique sandwiches, you also need to have unique bread. Each sandwich needs to be dialed in its own way.”

Old World Deli has run many different sandwich specials over the years. If there’s a specific sandwich you wish would come back, don’t worry. It just might – in at least one incarnation or another. Zach says they sometimes revisit a special that sold well and change it up a bit, updating its inner workings.

Old World Deli offers a plethora of delicious, cured, artisan meats. Photo credit: Conor O’Keefe.

The porchetta is a popular sandwich they have returned to multiple times. A hit since they put it on the menu, this sandwich has seen several different looks over the years – and it won’t be surprising if it sees a few more in the future, too.

Old World Deli continues to be a memorable Bellingham eatery, largely because they aren’t afraid to try new things. With impressive weekly sandwich specials and a plethora of imported wines, this is a remarkable culinary experience. Be sure to stop in and savor one of their unique and delicious creations.

Bellingham’s Over Easy: Comfort Food and Community

From timeless comfort food to healthy options, Over Easy is the local gathering place for good company and good food. Photo courtesy: Over Easy.

Over Easy serves delicious, home-cooked food just like Mom used to make. You might feel like a kid again as you savor their delicious comfort food in the eatery’s warm, inviting space – where you’re always welcomed with a smile.

Jamie Bohnett has created a food experience that transports you back to the comforts of home and family. Photo courtesy: Over Easy.

“I fell in love with the concept,” says Owner Jamie Bohnett of the Over Easy franchise opportunity. “The idea came from one of the founders wanting to re-create his mother’s kitchen from the 1950s.”

Over Easy serves classic customer favorites, such as chicken fried steak, chicken and waffles, and good old-fashioned sandwiches. Then there’s the popular “Wolf Pack,” a layered mixture of hash browns, eggs and bacon. You’ll find yourself transported right back to the comforts of home with these timeless recipes.

“We don’t take shortcuts,” Bohnett says. “We use fresh ingredients and make our food mostly from scratch. There’s nothing from a box at Over Easy.”

The Over Easy franchise was developed in Scottsdale, Arizona by a father-and-son team. The concept first caught Bohnett’s attention while he was spending time with his father, a restaurant veteran. He fell in love with the idea of serving good, home-cooked food in a comfortable setting.

After 30 years working in the non-profit sector, Bohnett was ready for a new adventure. He decided to bring Over Easy to the Bellingham community. From the beginning, he knew this was something he and his wife could do well and enjoy. On April 30, 2015, the couple opened Over Easy on James Street, next to Trader Joe’s.

From family gatherings to business meetings, Over Easy brings everyone together. Photo courtesy: Over Easy.

“We love this community,” says Bohnett. “We love bringing family and friends together.”

The new endeavor also brought Bohnett closer to his father. The two spent time together when Bohnett attended new franchise owner trainings in Scottsdale. Jumping into the food service industry also meant the two men could share a new connection, as Bohnett’s father co-founded a national restaurant franchise in the 1950s. Bohnett knew the enthusiasm and commitment it takes to successfully run a family restaurant – and he wanted to replicate that excitement.

“I wasn’t really attracted to being in the restaurant business most of my career,” Bohnett says. “But I really fell in love with this concept. I knew it was something I could do.”

Bohnett has always had a passion for community building. For him, Over Easy is a place to bring people together: for a family meal or a quick business meeting. In fact, the Better Together Breakfast, part of Bohnett’s A Future & A Hope Foundation, meets at Over Easy every month.

Bohnett created A Future & A Hope Foundation in 2014 to serve the neglected and the vulnerable in our community. The organization works in partnership with Over Easy to provide fundraising opportunities that benefit many of our local non-profit organizations. The foundation facilitates breakfast meetings and evening fundraising events, as well as provides grants to qualified organizations and individuals.

From timeless comfort food to healthy options, Over Easy is the local gathering place for good company and good food. Photo courtesy: Over Easy.

“I don’t want to be just another restaurant,” says Bohnett.

Bohnett has learned a lot along the way. This committed father, grandfather and husband recounted his journey and life lessons in the book, “Letters to My Son,” published in 2011.

“Be better and not bitter,” he says. “It’s very important to listen to criticism. There is no silver bullet when it comes to success, which makes consistency in quality and service so important.” He has learned to always look forward and not dwell on the past. “Have perseverance and learn from your mistakes.”

Learning from his own father has helped Bohnett create a special experience at Over Easy. “I want this to be a place that creates memories,” he says. “We’re not going anywhere; we’re here to stay. Through the restaurant and the foundation, I want to continue to build community and support for our community. That’s my dream.”
