Hotel Bellwether and Lighthouse Grill are excited to debut a new winter menu by Chef Ryan Houser.

Lighthouse Grill is situated on the first floor of the Hotel Bellwether, overlooking the pristine Bellingham Bay and San Juan Islands. In the winter, the sun sets around 4:30 p.m., which is perfect for sitting by Lighthouse Bar and Grill’s quaint fireplace in the bar area and dining room. As you watch the sunset while enjoying the warmth from the flame, sip on a specialty house cocktail crafted by the talented bartenders.

When you’re ready for dinner, take a look at the restaurant’s brand-new menu. Curated by new Executive Chef Ryan Houser, the menu’s new items include the filet mignon served with sides of garlic house made gnocchi and asparagus. A wild cedar plank baked salmon filet served with local mushrooms, and grains. A honey hazelnut crusted braised lamb shank, and more. Visit the Lighthouse Grill to experience Chef Houser’s dazzling weekly specials. In addition to these new items, the Lighthouse Grill is proud to introduce their first-ever entirely vegan menu option. Additionally, Chef Houser has added more vegetarian-friendly choices to the Small Plates menu.

If you haven’t been to the Lighthouse Grill recently, or if you’ve never had the chance, now’s the best time to stop in. The warm, fire-lit bar has the perfect ambiance for a winter’s evening.
