The Mill by Perfectly Paired, bringing a unique bistro menu and old-world atmosphere to downtown Lynden, is opening March 9 in the Dutch Village Mall, 655 Front St.
The Mill’s owners, Robin and Matt Hungerford of Lynden, also own Perfectly Paired, a specialty food retail shop in Bellingham’s Fairhaven district. The Mill will feature the best meats and cheeses, plus a full bar offering craft cocktails and wines chosen to pair with menu items, Robin Hungerford said.
“We’re going to be an ideal place for lunch and dinner, plus casual get-togethers during the day,” she added.
The Mill’s lunch/dinner menu will include appetizers such as specialty cheese and charcuterie plates, fresh salads, panini sandwiches, crostini and flatbreads, plus housemade chocolates and desserts.
A retail case will be stocked with quality meats and cheese for customers who want to bring them home, Hungerford said. Also, the monthly Pairing Club started by Perfectly Paired will be expanded to The Mill, giving customers a chance to experience seasonally or themed artisan products hand-selected for their unique tastes and high quality. Another option will be periodic winemaker pairing dinners, Hungerford added.
“Our goal is to bring a smile to each customer through our passion for food and wine,” she said.
The Mill will be open from 11:00 a.m. to 9:00 p.m. Monday through Thursday, 11:00 a.m. to 11:00 p.m. Fridays and Saturdays, and 11:00 a.m. to 8:00 p.m. Sundays.
