Jamie Bohnett fell in love with the Pacific Northwest’s picturesque summer evenings. Beautiful sunsets, warm weather and a slight breeze are especially delightful in this part of the country. June rolls around and Whatcom County transforms into a sunny haven filled with outdoor explorers and eager travelers – all hungry for a good meal. Bohnett knows this, being one of them himself. This led him to make a decision no other Over Easy Café has ever made: open for dinner.

“We can do this because we’re a franchise,” Bohnett says. “I own the Bellingham store; we’re a local business, not a chain. And because of that, we can try something outside of the box.”

Bohnett’s new take on the Over Easy model is bold, innovative and a down-right good idea. Extended hours on a nice summer night is a recipe for success.

Over Easy will be open from 7:00 a.m. to 6:00 p.m. Friday through Sunday from June 21 to Sept. 15. And if you want breakfast for dinner, you’re in luck; the whole menu will be available plus welcome additions such as new dinner specials, a grapefruit IPA to add their popular blood orange IPA and a house red and white wine.

“We’re trying this out this summer and will evaluate it in the fall to see where we’re at,” Bohnett says. “We’re hoping families in our neighborhood will take advantage of this, such as Trader Joe’s shoppers and Brio Laundry customers who are waiting for their laundry – whomever.”

Over Easy will run $9.99 dinner specials, creating dishes from the plethora of breakfast-centric ingredients they have on hand. For example, Bohnett plans to take their chicken fried steak and pair it with real mashed potatoes and broccoli.

“In everything we do, we try and incorporate that home-cooked style,” Bohnett says. “So you better believe we’re going to add gravy with those mashed potatoes, too.”

When searching for restaurant franchises to invest in, Bohnett was attracted to those that opened for breakfast and lunch. At first, working between 7:00 a.m. and 2:00 p.m. appealed to him greatly. But he now feels the importance of later hours. He hopes Over Easy’s extended summer schedule will allow them to serve quality food to more individuals in Whatcom County.

Over Easy will offer one dinner special each Thursday, Friday and Saturday night for a family-friendly price of $9.99.

The summer fun at Over Easy doesn’t stop there. All summer long, the restaurant will serve free pancakes and waffles to kids from 2:00 p.m. to 6:00 p.m., with one adult meal purchase. It’s a great way for parents to sit down and enjoy a nice meal while the kids eat free.

Summer dinner specials and free waffles and pancakes are already striking the right chords with Over Easy’s restaurant regulars. “As we’ve been talking about this with our customers, we’ve already found an enthusiastic response to the idea,” Bohnett says.

“I’ve lived in Bellingham going on four years and believe there’s an opportunity for our business to [succeed] with our extended hours on Thursday, Friday and Saturday, especially in the summer,” he says.
