The Wrap on Crepes in Bellingham

Have you ever tried to make crepes at home? It’s easy to find a free recipe and the ingredients are fairly simple: flour, eggs, milk, water, butter and salt. For me, the trick is in balancing the batter and getting that super thin pancake spread out evenly over a hot pan.

Growing up, homemade crepes was a special experience taking up a large part of the morning. Jam was spread over the freshly made crepe, rolled around into a little spiral and after five tiny crepes were on a plate, powdered sugar was delicately tapped through a fine metal sieve to decorate the top – a very dedicated endeavor quickly devoured in minutes. I enjoyed the experience so much as a child that years later when I received a variety pack of jams at a work Christmas party there was only one destiny for them in mind: crepes!

My first encounter with the savory crepe was inside the Mount Bakery on Champion Street back when they still served them there. I ordered a lunchtime savory Greek style crepe with Kalamata olives on special. That crepe was so delicious that it is permanently filed in my mind as a personal favorite and it also opened my eyes to the realization that crepes can be so much more than little jam filled rolls with sugar on top.

Fast forward to present time and crepe options seem to have expanded toward unlimited choices. From “crepizza” to crepes served with ice-cream both savory and sweet, folded and sculpted – a variety of delicious options can be found around Bellingham for breakfast, lunch, dinner and desert. Most offer gluten free options and one-of-a-kind seasonal specials.
